Biscuits have always been a part of everyone’s add-on snack menus. Indian biscuit industries are the largest among all the other industries and India is also known for being one of the largest producers of biscuits after the USA and China. Bread and biscuits cover almost 80% of the bakery products in India. However, biscuits are produced at a higher level and thus cover more percentage than bread. More than 90% of India’s population consumes biscuits, which is more than the imports made by India. Also, India is considered as one of the prime exporters of biscuits. The general steps of manufacturing biscuits are mentioned below.
- Preparation of dough
The process of manufacturing a biscuit starts with the preparation of dough using a biscuit processing machine. Some ingredients are put down into the mixer to get a perfect batter. During the production of hard biscuits, proofing of the dough is required; it can be done either by using additives in the dough or by using a fermentation chamber with perfect conditions.
- Process of Fermentation
In the process of fermentation, the dough is mixed with the right amount of yeast and that mixture is left for a complete fermentation. The whole process of fermentation takes around 21-26 hours to complete. Yeast makes the dough of the biscuit airy and light. It enhances the texture of the biscuit and makes the biscuit melt in your mouth.
- Define size, shape, and pattern

- Packaging and Transportation
After a successful quality check, the biscuits are packed in different quantities and are moved on to a machine for packaging. After this process, the biscuits become completely ready for transportation and consumption. Baked products are delicate, so they need to transported gently and automated wrapping systems and loaders should be used while transporting.
